Easy Turkey and Wild Rice Soup Recipe

I don’t know about you, but to me there is something so wholesome about a soup dinner in the fall and winter. What’s especially wholesome, is a naturally creamy and hearty turkey and wild rice soup that takes less than an hour with simple pantry ingredients. Our recipe calls for shredded turkey and turkey stock, since we usually make this right after Thanksgiving, but you can easily substitute chicken and chicken stock instead to make this soup accessible all season long.
Since the stock for this recipe is going to be the base for all the flavor, we definitely recommend using a high quality or homemade turkey stock with lots of flavor. We used our Thanksgiving turkey carcass to make an absolutely delicious, rich, and complex broth that really makes this soup pop. The great thing about using your turkey carcass for the stock is that you can salvage all of the turkey left on the bone after carving and use that right in to this recipe.

In all seriousness though, this will be one of the easiest homemade soups you will make and is guaranteed to be a hit with the whole family. Prep time is less than 15 minutes and total cook time of under an hour.
Turkey & Wild Rice Soup

Prep Time: 15 minutes | Cook Time: 45 minutes | Yield: 4 servings
INGREDIENTS
Turkey stock - 6 cups
Shredded Turkey - 2 cups
Wild Rice - 1 cup
White onion - 1 medium, diced
Carrots - 2 large, diced
Celery - 2 stalks, diced
Butter - 3 tbsp
Black Pepper - 1 tsp
Salt - 1 tsp
Thyme - 1 tsp
Flour - 3 tbsp

This soup would also go great with sauteed mushrooms, broccoli, or peas. If shredded poultry isn’t your thing some diced bacon would be divine.
PROCESS
Melt butter in pot, add onions and cook until soft (3-4 minutes).
Add carrots and celery. Saute for an additional 3 minutes.
Incorporate salt, pepper, and thyme. Stir well. Add the flour slowly and coat all the vegetables.
Add rice and turkey stock. Bring to a simmer for 30 minutes while stirring intermittently.
Add shredded turkey and continue to simmer for 10-15 minutes until rice is soft.
