Lemon Balm Cookie Recipe

Lemon Balm is an herb that comes from the mint family, and if you know anything about mint it’s a very prolific plant to say the least. I’m new to growing lemon balm (rookie year here!), and well, it’s super easy to grow! It’s one of those herbs where you can literally plant it and forget it (though if you forget it completely it can easily take over your garden bed).
Lemon Balm has a very strong lemon zest taste (similar to biting into the rind of a lemon) and therefore, can replace lemon zest in many recipes! In moderation, it adds just the right amount of fresh lemony taste to any recipe you add it to. My favorite so far are Lemon Balm Cookies. I wouldn’t call these a typical dessert cookie, but rather the best breakfast cookies. Yep. They are soo so good with coffee. I often meal prep these on Sunday’s and snack on one each morning.
So here’s what you need:
Ingredients
2 tablespoons lemon balm leaves, minced (1-2 handfuls from the garden)
1 teaspoon of lemon juice (or any citrus you have on hand)
1 cup butter, softened
2/3 cup sugar
1 egg
2 1/3 cups all-purpose flour
1 teaspoon salt
And here’s what you want to do:

Wash, dry then mince the lemon balm leaves and place in a small dish with the lemon juice. Press mixture together with the back of a spoon to combine.
In a large mixing bowl, cream the butter and sugar together until light and fluffy.
Next, beat in the egg, and the lemon balm leaves and citrus juice mixture from step one.
Gradually beat in flour and salt until combined.
Roll out batter and form a tube, cover in wax paper and refrigerate until firm (about 3 hours). The rolled out dough will look similar to the tubes of pre-made cookie dough you can buy from the grocery store.
Preheat oven to 350 degrees.
Slice batter into cookie size pieces, approximately 1/8-1/4'“ thick. (Note, the thicker the slice the longer the cookies may take to bake).
Place cookies on a cookie sheet, and bake for 8-10 minutes. The cookies are done when the edges have browned slightly.
