We often joke that our marriage would not have worked out if either of us didn’t like garlic. Thankfully the amount of garlic we put in our food is something we both agree on, and we typically double the amount that any recipe we find calls for. Now, you don’t need to be a garlic lover like us to love this way of roasting garlic, but if you do love garlic like us, this method may change you life! For quite some time we used the tinfoil method where you chop the top off the head of garlic and cover in tin foil to cook. And yes that works, but we found it to be messy and difficult to serve plus there was always garlic left that was wasted.
In the method we show you below, you peel the entire head of garlic and place in a small baking dish (we absolutely love these mini le Creuset) and barely cover in oil then cover with a lid. The uses of the roasted garlic are endless. Here are a few suggestions on how we use it:
Make roasted garlic mashed potatoes
Smear it on a steak (or other protein)
Make compound garlic butter
Make a garlic vinaigrette
The oil (now infused with garlic) is fantastic for garlic bread
Just to name a few. So let’s get straight to the point and tell you exactly how to make it.
