Thanksgiving is here and it’s hands down the best food holiday. The meal is great, but let’s be real.. the leftovers are the best part! And we’re here to share a great way to do something new with your holiday leftovers instead of the typical turkey sandwiches.

A Thanksgiving galette!

For those not familiar, a galette is a french term for a flat round pastry filled with something delicous. The glory of this galette is its perfect for leftovers! We used a store bought pie crust (though you pastry chefs can certainly make one from scratch) then layered the inside with various Thanksgiving leftovers. For us, this included mashed potatoes, corn casserole, stuffing, turkey and green beans then a drizzle of gravy - but it's good with any variation of leftovers! We even experimented with one that we pre-mixed all the leftovers together, but found the layered method won out. If you have extra cranberry sauce, we suggest adding that to the top.

Time: 20 mins prep | 40 mins cooktime | 60 mins overall

Yield: 1 galette | serves 4

Steps:

  1. Pre-heat oven to 350 degrees.

  2. Roll out pie crust and lay on a greased cookie sheet.

  3. Leaving 1 1/2” of crust exposed, layer leftovers one on top of the other in the center of the pie crust - mashed potatoes, sliced turkey, corn casserole, stuffing, green beans. Drizzle with gravy.

  4. Gently fold over crust layering in a circular motion.

  5. Cook galette in the oven for 40 minutes or until crust appears golden brown.

  6. Transfer to a cutting board to cut into pie slices and enjoy!

Ingredients:

  • Pillsbury Pie Crust (1)

  • 1 cup mashed potatoes

  • 1/2 cup corn casserole

  • 1/2 cup stuffing

  • 1 cup turkey (sliced)

  • 1/4 cup green bean casserole

  • 1/4 cup gravy
