This jam will ROCK.  YOUR.  SOCKS.

Seriously.

Harvesting those petals!

It is literally the perfect companion to your next charcuterie night, it’s amazing on ice cream, and will in-fact cheer up your next breakfast toast.  Need an inexpensive gift idea?  The color of this jam will wow anyone you give it to PLUS they will think you are a wizard in the kitchen.  I have a couple rose bushes in my backyard and only needed about four large blossoms for this recipe.

Bonus- it took less than an hour to make!

Feel free to double or triple this recipe if you have a bountiful harvest and want to can – without canning they will last about 2 months in the fridge, but with canning they will last months in your pantry.  You can also choose to collect your rose blooms over time and let dry prior to making this recipe as well (just note the change in quantity below). Also, be leery to wash your petals before drying, and make sure you lay them out so no mold grows.

Note: with jelly you need to hot water can (not pressure can)* If you’d like more tips on how to preserve, check out our article on the Basics of Canning & Preserving!

Making Rose Petal Jam - While simmering the petals, you will notice much of the color dissipates into the water. But don’t fret- once you add the lemon juice that beautiful rose color will return!

Curious about eating roses? I did a little research and check out these health facts on the beautiful flowers:

1.       Rose blooms are antioxidant rich – meaning it provides powerful cell protection!

2.       Rose blooms will enhance your mood – a study found that the extract in rose petals can relax the central nervous system resulting in anti-depressant and anti-anxiety effects!

3.       Rose blooms can reduce digestive upset – prior to modern medicine, rose petals were used to relieve digestive upset and aid in good digestion.

Just be sure you know exactly where your rose blooms are coming from.  You want to ensure that no pesticides were sprayed or used.

Homemade Rose Petal Jam

Ingredients for Rose Petal Jam

Recipe:

1 ½ cups of filtered water

2 cups of fresh rose petals (washed and free from any pesticides) – or 2/3rd cup of dried rose petals

2 cups of sugar

1 tsp fruit pectin

3 tbsp fresh lemon juice (roughly 1.5 large lemons)

STEPS:

 1.       In a large saucepan, add the filtered water and thoroughly washed rose petals.  Bring to a simmer for 10 minutes, stirring occasionally (preferably with a non-metal spoon).

2.       Gradually add 1 ¾ cups of sugar while stirring and let dissolve completely.  Add lemon juice.  Continue to let simmer for another 10 minutes, stirring occasionally.

3.       In a bowl, mix the remaining ¼ cup of sugar with the pectin.  While stirring, add to the saucepan and continue to simmer for an additional 20 minutes.

4.       Pour contents into jars of your choice (if you plan to can, be sure to sterilize your jars first).

5.       This recipe yields 16oz of jam; we used four 4oz jars.  The jam will firm up as it cools and will keep for up to 2 months in the fridge.
